This puff pastry cheese pockets recipe is super easy to make! Your kids will love taking part in helping you make them and, of course, eating them afterward.

I have an easy Armenian khachapuri recipe for you that you’ll enjoy preparing with your kids. Even if you haven’t baked a thing in your entire life, you can make this, trust me!
Let’s admit kids LOVE dough!
And when the result of some play with dough is a delicious mouth-watering snack – even better!
Puff pastry cheese pockets or cheese bread or cheese pastry – whatever the name – is one of my favorite things on Earth. We Armenians call them khachapuri.
Khachapuri is actually a signature dish of Georgians, but Armenians also love it and often make. There are many different types and recipes of Georgian Khachapuri (cheese bread) but as a busy mom, I always go with the one that’s easy to make.
In fact, I adopted it to my making so much that I’m sure if a Georgian chef looked at my recipe they’d cringe. But it certainly is the easiest way that requires only 4 ingredients.
And no, I don’t make the dough from scratch. Remember, this is the easy khachapuri recipe.
So for my super easy Armenian khachapuri or puff pastry cheese pockets, you’ll need store-bought puff pastry – if you can make your own from scratch, by all means, go ahead – 2 types of cheese and egg yolk.
That’s it!
The recipe is so simple, your older kids can make it on their own! My kids always take part in helping me.
These cheese pastries are great for breakfast, lunch, snacking, would go perfectly into your kid’s lunch box. They are also a great appetizer or snack for a social gathering or major holiday celebrations!
Khachapuri stays delicious on the second and third days. Just put them in the microwave or enjoy cold.

Ingredients Needed for Armenian Khachapuri
As I mentioned above, you need only 4 ingredients:
- 2 sheets of puff pastry(store-bought or homemade)
- 10.5 oz feta cheese
- 8 oz shredded mozzarella cheese
- 1 egg yolk
I tried all kinds of different store-bought puff pastry and the one I like the most is Pepperidge Farm’s 2 sheets frozen puff pastry (red color). I always stoke up my freezer with these and use them for all recipes that call for puff pastry.
As for feta, you can either buy feta crumbles. Or the whole piece of feta cheese and break it up into small crumbles with a fork (that’s what I do).
Step-by-Step Instructions with Pictures
First, the night before take your frozen puff pastry out of the freezer and transfer to the fridge. Let it thaw overnight. If you forgot, no worries. Just take it out 2 hours before baking. It thaws quite quickly.
Mix the two types of cheese in a bowl. That’s the part your kid can help you with. My boy loves breaking the whole feta piece into crumbles with a fork and then mixing it with the shredded mozzarella.
Take one of the puff pastry sheets out of the packaging. Spread it open on the table. Give your child a rolling pin and let him roll out the dough from all sides. Not much rolling out is needed. Just enough to make it a bit thinner.
Then cut the sheet into 6 equal squares. Now your child can help with putting the cheese mixture onto each square. You can also add a small piece of butter to each square to make them more buttery.
After all the squares are stuffed, grab 2 opposite corners and bring them together to the center. Repeat the same with the other two. Now pinch the edges tightly together making a cute looking square. Alternatively, you can make a triangle shape by just bringing 2 of the 4 corners together and pinching the edges together.
Preheat the oven to 375°F / 190°C.
Place the cheese buns on a baking sheet with the pinched side up. You can use a parchment-lined baking sheet although that’s not necessary, as the buns won’t stick.
Have your child brush each bun with egg yolk.
Bake for 15-25 minutes or until the buns are golden brown.
The smell will make everyone drool, trust me! Your kids and the whole family will love these cheese buns. And they are perfect to sneak in some calcium into your kids’ diet.
They taste the most delicious when are right out of the oven. Enjoy!

- If you prefer you can make a triangle shape instead of square by just bringing 2 of the 4 corners together and pinching the edges tightly.
