Heat 1 tablespoon of olive oil in a pan, then sauté the white onion for 5 minutes until softened.

Add the garlic paste, tomato paste, chipotle sauce, diced tomatoes, and 1 cup of broth. Stir, bring to a boil, then simmer for 5 minutes.

Cook the chicken in the remaining olive oil with salt and pepper for 6 minutes, then flip and cook for another 5–6 minutes.

Pour in the sauce and remaining broth, then simmer the chicken for 30–40 minutes.

After half an hour, separate the chicken into fibers with two forks.
Beat the remaining tinga sauce in a blender until smooth.
Return the chicken to the pan with a little sauce and heat for 5 minutes, stirring. Let it cool slightly.
Assemble the tacos with tortillas and top with lime, feta or cheddar, cilantro, and avocado. Enjoy!
