Instructions
If you find your chicken breasts are thick, thin them out into chicken cutlets using a meat pounder. You can also use a sharp knife to cut them to your desired thickness.
2-4 boneless, skinless chicken breasts
Prepare egg wash by whisking 1 egg with 2 tbsp water.
1 egg
Combine flour with salt and pepper. Use this flour mixture to dredge the chicken in.
1 cup all-purpose flour, 2 tsp salt, 2 tsp ground black pepper
Dip floured chicken in egg wash and coat with breadcrumbs as a final step.
1 cup panko/ breadcrumbs
Pour the oil into a deep frying pan or skillet and set to high heat.
1 ½ inches avocado oil
When the oil is hot enough, deep-fry the chicken pieces in the hot oil until cooked for about 3 to 5 minutes on each side. It should turn golden brown.
Serve with mashed potato and green beans. Enjoy!
1 potato
Notes
TIP! Make sure the oil temperature reaches at least 325° F before adding the chicken, otherwise the chicken will start to absorb the oil and become soggy and greasy. But don’t wait for the oil to get too hot either. In that case, the chicken will burn on the outside without being fully cooked on the inside. Use a deep fry thermometer to reach an optimal temperature of 325-375° F.
