Ingredients

  • 4 smoked sausages
  • 2 green bell peppers cut into sticks
  • 3 green bell peppers cut into sticks
  • 2 green chili peppers (optional)
  • 2 large yellow onions sliced
  • 3 garlic cloves mashed
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1 tsp dried oregano
  • Salt
  • black pepper
  • Fresh parsley
  • 6 medium potatoes
  • 1 tbsp sour cream
  • 3 tbsp salted butter

Instructions

  • Preheat the oven to 392°F.
  • Wash the peppers and onions, cut the peppers into strips and the onions into slices, then place them in a deep pan.

  • Add the spices, salt, and pepper to taste, then drizzle with olive oil and mix gently.
    3 garlic cloves, 2 tbsp olive oil, 1 tsp smoked paprika, 1/2 tsp dried thyme, Salt, black pepper, 1 tsp dried oregano
  • Add the smoked sausage on top of the vegetables, along with the chili peppers (optional).

  • Cover with baking foil and place in the preheated oven. Bake for about 20 minutes. Then remove the foil and leave for another 10 minutes or until the sausage is golden brown.
  • Make the mashed potatoes:
  • In a deep saucepan, place the potatoes together with the skin.
    6 medium potatoes
  • Pour in enough water to cover the potatoes—season with 1 tsp salt. Place on the stove over medium heat and cook until the potatoes are tender.
  • Remove the potatoes from the boiling water and pour cold water over them to cool and peel them.
  • Place the peeled potatoes in a deep bowl, along with the sour cream, salt to taste, and the butter.

  • Mash the potatoes until you get a creamy texture.
  • Serve:
  • Cut the sausages into thick rounds.
  • Serve the warm smoked sausages on a bed of creamy mashed potatoes and plenty of vegetables.
  • Sprinkle with fresh parsley.
