Ingredients

  • 1 cup Italian sausage ground
  • 2 tbsp oil for frying
  • 1 onion diced
  • 2 cloves garlic minced
  • 3 cups broth
  • water if needed
  • 3 potatoes
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp dried herbs (oregano, basil, thyme)
  • 1/2 cup cream
  • 2 cups kale
  • fried bacon opitional
  • Parmesan optional

Instructions

  • In half the oil, fry the Italian sausage over medium heat, breaking up any large pieces with a spatula. Stir to cook evenly. Remove from heat after 7-8 minutes.

  • In a saucepan, fry the onion in the remaining oil for 3-4 minutes, then add the garlic and fry for 1 more minute.

  • Pour in the chicken broth, water if needed, cream, diced peeled potatoes, salt, pepper, and herbs. Cook for 20 minutes.

  • Check the potatoes for tenderness.
  • Add the browned sausage and kale, cook for another 5 minutes, and turn off the heat.
