Vegan Stuffed Portobello Mushrooms

Healthy and easy to make vegan stuffed portobello mushrooms that are bursting with flavors and are perfect for any diet - vegan, vegetarian, keto and low carb, gluten-free. The perfect appetizer that will leave your guests wanting more. Can be made with or without cheese.

Ingredients

  • 10-12 portobello mushrooms
  • 2 tbsp olive oil
  • 1 small onion
  • 5 tsp chopped garlic
  • 2 tbsp walnuts
  • 2 tbsp dried tomatoes
  • 2 tbsp chopped parsley
  • 1/4 tsp salt
  • 1/4 tsp black pepper

For dressing:

  • 3 tbsp chopped parsley
  • 1-2 cloves of finely chopped garlic
  • 1 tsp lemon zest
  • 1 tsp red wine vinegar
  • 5 tbsp olive oil
  • 1/8 tsp salt
  • 1/8 tsp black pepper

Instructions

  • After cleaning the mushrooms, gently remove mushroom stalks. Finely chop the stalks.

  • Preheat a saucepan to medium heat, add olive oil. Fry the onion and garlic for about 10 min until soft. Add the chopped mushroom stems and fry for another 3-4 minutes.

  • Remove the mixture from the heat and transfer it to a bowl. Add chopped nuts, chopped sun-dried tomatoes, parsley, salt and black pepper.

  • Mix well.
  • Gently stuff the mushrooms with the filling mixture. Arrange the stuffed mushrooms on a baking sheet.
  • Preheat the oven to 350º F (175º C). Transfer the stuffed mushrooms to the oven for 15 min until golden brown.
  • In a separate bowl, mix all ingredients for the dressing.

  • When mushrooms are ready, transfer them to a large plate and pour 1/2-1 tbsp of dressing on each one.
  • Garnish with cherry tomatoes and fresh herbs of your choice (parsley, tarragon, basil, cilantro).
