Blend the feta cheese and yogurt in a blender or food processor.
½ cup plain Greek yogurt, 8 oz block of feta
Add the minced garlic, lemon juice, and olive oil.
½ tsp lemon juice, 1 tbsp extra virgin olive oil, 1 garlic clove
Blend everything together.
Pour the mixture into a bowl or dish.
Drizzle a little olive oil on top.
Sprinkle some chopped parsley and top with a few Kalamata olives.

Notes
Block, not Crumbled: For best results, make sure to use block feta cheese for this recipe. Crumbled feta is too dry and won’t taste nearly as good.
Use Room Temperature Ingredients: Let the feta cheese and Green yogurt sit at room temperature for several minutes before using. Blending cold ones might make the dip lumpy instead of smooth and soft.
Control Consistency: Consider adding the Greek Yogurt slowly to help avoid making the dip runny. Start with half the amount, pouring more until you’ve reached your desired consistency, texture, and taste. Conversely, if you think the dip is too thick, consider adding milk or cold water. This will lighten the dip’s texture without changing the flavor too much.
Blend Well: You’ll want your feta dip smooth, not gritty, so blend the mixture for a few minutes instead of seconds. This process will help break down the feta cheese fully.
