To make the cobbler, stir the flour, sugar, salt, milk, and baking powder together in a medium bowl.
1 cup sugar, 1 cup flour, ½ tsp salt, 1 cup milk, 4 tsp baking powder
Pour the mixture into the pan with melted butter.
To make the filling, whisk together the evaporated milk, pumpkin puree, sugar, brown sugar, eggs, pumpkin spice, and flour.
3 cups pumpkin puree, 1 cup evaporated milk, 2 eggs, 1 cup sugar, ⅔ cup brown sugar, 1 tbsp flour, 2 tsp pumpkin pie spice
Pour the pumpkin mixture into the pan. Spread the wet ingredients evenly.
Cut cold butter into cubes and then spread it over the top.
4 tbsp butter
Sprinkle a little sugar over the top.
¼ cup sugar for sprinkling
Place in the preheated oven and bake for about 50 - 60 minutes, or until the edges are brown and the middle is set.
Remove the baked cobbler from the oven and allow it to cool.
To make the drizzle, combine the milk, powdered sugar, vanilla, and marshmallow cream in a separate bowl.
1 cup powdered sugar, 3 tbsp milk, ½ tsp vanilla extract, 7 oz container marshmallow cream
Once you’re ready to serve the cobbler, just drizzle the mixture over each serving.
Enjoy!
